I know it's all "basic" to like Pumpkin Spice anything these days but screw you guys! I can't help that I enjoy the taste of pumpkin and spice so keep your judgey ass over there while I shove pumpkin spice anything in my face. And now, Angelina, with a healthy Pumpkin Spice Muffin recipe to go along with your #PSL, pumpkin spice yogurt, pumpkin spice lip gloss and pumpkin spice everything else.
Pumpkin Spice Muffins
I’m obsessed with pumpkin everything (yep I’m that girl those ecards are making fun of). I love pumpkin muffins but wanted a much healthier version than the recipes I kept finding. I came up with this recipe over the weekend and they were really good! And, shhh, they don’t contain oil, flour, or butter. These are guilt free!
2 ½ cups organic oats (regular is fine too)
1 cup non fat plain Greek yogurt
¾ cup agave nectar
1 ½ tsp baking powder
½ tsp baking soda
1 tsp vanilla extract
1 Tblsp pumpkin pie spice
1 (15oz) can unsweetened pumpkin
Preheat oven to 400 degrees. Spray muffin tin with cooking spray or liners
Place all ingredients minus the oats in a food processor. Begin blending while adding oats a little at a time and blend until smooth.
Divide batter among muffin tins and bake for 15 minutes or until a toothpick comes out clean
Enjoy as is or top with Nutella or pumpkin butter!
